Yury Kudryavtsev, Goodman's brand-chef, is notable for his subtle sense: he carefully studies guests' preferences and wishes, and has added speciality soups and a new steak presentation to the menu. The most interesting novelty is ‘Wellington’ beef. The traditional English dish is made of tenderloin baked in puff pastry. To make it especially juicy and flavourful, duxelles — mushrooms finely chopped almost to a paste condition and mixed with onions and herbs — are added between the crust and meat.
