Считается, что лучшие итальянские повара работают за пределам страны. Один из них, Сальваторе Никотра, возглавляет кухню в московском ресторане La Provincia. Шеф пропагандирует блюда и вина южного региона Италии: паста с морепродуктами, тонарелли с черным трюфелем, ризотто с чернилами каракатицы. Ресторан регулярно приглашает других региональных звезд. В марте здесь с успехом прошли гастроли Паоло Касагранде, шеф-повара ресторана отеля Casta Diva на озере Комо, обладателя мишленовской звезды.
